This pie is super quick and easy to make, but also very yummy. The nice thing additional is that this pie also fits for student’s wallet! You can very easily cover the Creme Fraiche with sour cream (sour cream in this pie is super yummy!) and blueberries you don’t need so much. This pie is also great reason to go to forest and pick some, you can also replace blueberries with any other berries or fruits you like.

Blueberry cheese pie
For base:
200 grams (7 oz) butter
2 dl (0.85 cups) white fine sugar
5 dl (2.1cups) wheat flours
1 tsp baking powder
1 tbsp cold water

Filling:
200 grams (7 oz) Philadelphia cream cheese
150 grams (5.2 oz) Creme Fraiche (or 200g (7 oz) sour cream)
200 grams (7 oz) fine sugar
2 big eggs
1 tsp cornstarch
1/2 squeezed lemon
– – –
On top:
frozen or fresh blueberries

How to make it:
1. Base: Rub the butter, sugar and flours together until it’s smooth, add cold water and beat the mixture by hand until it’s beautiful dough. Cover a baking tray with baking paper and press the dough on bottom and a little bit of sides, too.
2. Filling: mix all ingredients together by hand or electric mixer. Pour the mixture on top of base.
3. Decorate with blueberries before baking.
4. Bake in 200 C (390F) for 20-30 minutes.
