The idea for these cookies popped into my mind actually from amazing cookie recipe I created for Picasso two weeks ago. He went crazy on them which made me try them as well. It wasn’t bad, but actually pretty good which made me think about creating something similar for humans: healthy but same time suuuupper yummy. I have already tried few different flavor versions of these and added them below the recipe, so feel free to pick the one you prefer!

Idea tähän pehmeään proteiinikeksi reseptiin putkahti mieleeni itseasiassa Picassolle tekemästäni koirankeksi reseptistä toissaviikolla. Pikkujätkä sekosi kekseistä täysin, mikä sai minut pohtimaan vastaavanlaista herkkua meille kaksijalkaisille: terveellistä, mutta superherkullista. Olen jo kokeillut monenlaisia makuja näihin kekseihin, makuvinkkini löydät reseptin ohesta. Ei muuta kuin kokeilemaan!
HOMEMADE PROTEIN COOKIES
These cookies are amazing snack to carry with, but they also fit perfectly for breakfast and for bed time snacking. Oat and eggs naturally include high amount of protein so these cookies are such a protein bomb even without extra whey-protein addition.

Protein cookie dough:
3 big organic eggs
4 dl oat brans
2 1/2 dl oat flours (or wheat flours if you prefer)
2 tsp baking powder (optional, you can skip if you prefer super healthy cookies. In this case the cookies won’t be as spongy)
3/4 dl canola oil
2 dl ready-to-drink vanilla flavored protein drink (for example FAST or GAINOMAX)

Coconut protein cookies >> cover the canola oil with melted coconut oil
Banana protein cookies >> cover one of eggs with one mashed banana
Blueberry&Vanilla protein cookies >> add some blueberries into dough
Snickerdoodle protein cookies >> add 1 tsp of cinnamon into dough
For breakfast >> add few slices of cold cut and veggies on top

PEHMEÄT PROTEIINI KEKSIT
Nämä keksit ovat mitä mainion välipala, mutta yhtälailla ne sopivat myös aamupalalle ja iltapalalle joko sellaisenaan tai leivänpäällisten kera. Kaura ja kananmuna sisältävät luontaisesti runsaasti proteiinia, joten nämä keksit ovat todellinen proteiinipommi myös ilman ylimääräistä proteiinilisää.

Proteiinikeksitaikina:
3 isoa luomu kananmunaa
4 dl kaurahiutaleita
2 1/2 dl kaurajauhoja (tai vehnäjauhoja)
2 tl leivinjauhetta (voit halutessasi skipata tämän, mutta keksien kuohkeus jää tällöin pois)
3/4 dl rypsiöljyä
2 dl valmista vaniljanmakuista proteiinijuomaa (esim. FAST tai GAINOMAX)

Kookos proteiinikeksit >> korvaa rypsiöljy sulalla kookosöljyllä
Banaani proteiinikeksit >> korvaa yksi kananmuna soseutetulla banaanilla
Mustikka-vanilja proteiinikeksit >> lisää taikinaan mustikoita
Snickerdoodle-proteiinikeksit >> lisää taikinaan teelusikallinen jauhettua kanelia
Aamiaiselle >> lisää keksin päälle muutama siivu leikkelettä ja kasviksia
How to make it:
1. Whisk eggs by fork in a bowl. Add oat brans, flours and baking powder and mix well.
2. Add oil and protein drink, mix carefully until smooth.

Valmistus:
1. Vispaa munat kulhossa haarukalla. Lisää kaurahiutaleet, jauhot ja leivinjauhe ja sekoita hyvin.
2. Lisää öljy ja proteiinijuoma, sekoita varovasti, kunnes taikina on kuohkeaa.
3. Put the baking paper on baking tray and preheat the oven till 390F(200C)
4. Take a spoonful of cookie dough and drop it on baking paper. The cookies will spread a bit while baking so make sure there will be some empty space in between them.

3. Vuoraa uunipelti leivinpaperilla ja kuumenna uuni 200 asteeseen.
4. Nosta lusikalla taikinasta nokareita pellille. Keksit leviävät paistaessa, joten jätä niiden väliin tilaa riittävästi.
5. Bake the cookies in oven around 10 minutes.
6. Let the cookies cool well before removing them from paper.

5. Paista keksejä uunissa noin 10 minuuttia.
6. Anna keksien jäähtyä hyvin ennen leivinpaperilta irrottamista.
