I am sweet tooth, I love cake and pastries. I am still pretty picky about them. I love caramel and chocolate for example but I can’t stand too dark or dry chocolate cakes, and hard caramel I can’t stand at all. I love cheesecake but I very often dislike the bottom. Carrot cake is one of my favorite but topping need to be very creamy to fit on my taste.
Now I share my favorite carrot cake recipe, it fits nicely on Easter time for kids and adults. Very easily you can bake it to be gluten-free as well, just follow the recipe and choose your own way to do it.

Rakastan makeaa, kakkuja ja leivoksia. Olen silti melko ronkeli niiden suhteen. Toffee ja suklaa ovat lemppareitani, mutta liian tummaa ja kuivaa suklaakakkua en voi sietää. Samaten liian kova toffee ei meikäläiselle maistu. Rakastan juustokakkuja, mutta usein ongelmaksi muodostuu pohja. Jos taas pohja sopii makuhermoilleni, on täyte liian pliisu. Porkkanakakku on ikisuosikkini, paksu kuorrute ja kostea leivospohja tekee tästä herkusta lempparin.
Nyt jaan oman suosikkireseptini, joka sopii kivasti pääsiäiseen, ja tietysti sekä lasten että aikuisten makuun. Muunnat tämän porkkanakakku reseptin myös helposti gluteenittomaksi!
WONDERFUL CARROT CAKE RECIPE
Carrot Cake:
3dl sugar
3 big eggs
200g butter
2tsp vanilla sugar
4,5dl wheat flours / OR gluten-free flours
1tsp baking powder
1tsp cinnamon
300g grated carrot
Carrot Cake Topping:
300g Philadelphia Cream Cheese
100g soft butter
8dl icing sugar
Splash of whipped cream
For Decorating:
Walnuts and blueberries

1. Mix sugar, vanilla sugar, cinnamon, eggs and soft butter slightly in a bowl.
2. In other bowl add baking powder in flours. Slowly add flour mixture in egg mixture and mix until dough. In the end add grated carrots and mix well.
3. Grease 10 inches cake pan and pour the dough in it, and bake in 350F until well done, around 25 minutes.
4. Cool the cake down and cut into 2 or more layers.

5. Prepare the topping by mixing Philadelphia, soft butter and icing sugar in a bowl. In the end add just a little bit of whipped cream and mix until very smooth. Build the cake by spreading the topping between layers and on the top. Decorate with blueberries and walnuts.

IHANA PORKKANAKAKKU RESEPTI
Porkkanakakku:
3dl sokeria
3 isoa kananmunaa
200g huoneenlämpöistä voita
2tl vanilja sokeria
4,5dl vehnäjauhoja / TAI gluteenitonta jauhoseosta
1tl leivinjauhetta
1tsl kanelia
300g porkkanaraastetta
Porkkanakakun kuorrute:
300g Philadelphia -tuorejuustoa
100g huoneenlämpöistä voita
8dl tomusokeria
Tilkka kuohukermaa
Koristeluun:
Saksanpähkinöitä ja pensasmustikoita

1. Sekoita kulhossa sokeri, vaniljasokeri, kaneli, munat ja voi.
2. Sekoita toisessa kulhossa leivinjauho ja jauhot keskenään. Lisää jauhoseos hiljalleen taikinaan ja lisää lopuksi porkkanaraaste.
3. Voitele 24cm kakkuvuoka ja paista kakku kypsäksi 175 asteessa noin 25 minuuttia.
4. Jäähdytä kakku ja halkaise pohja 2-3 osaan.

5. Valmista kuorrute sekoittamalla Philadelphia, voi ja tomusokeri keskenään. Lisää lopuksi tilkka kermaa ja vatkaa kunnes kuorrute on ihanan pehmeää. Kokoa kakku levittämällä kuorrutetta kakkulevyjen väliin ja pinnalle. Koristele mustikoilla ja saksanpähkinöillä.
